What Quinary Sour
Why This cocktail is velvety on the tongue whilst a restrained richness is released from the vermouth and liquorice. The monk fruit lends a fragrant, dark honey note to the whisky as well, making it an easy-sipping cocktail that is both hearty and more-ish. Perfect for Autumn!
- 45ml monk fruit-infused Johnnie Walker Black Label scotch whisky
- 15ml homemade liqourice syrup
- 20ml sweet vermouth
- 20ml lemon Juice
- 15ml egg white
First, cook down a rich liquorice syrup using Chinese liquorice, water and rock sugar. Then, infuse some monk fruit into your Scotch whisky of choice - we use Johnnie Walker Black Label for its rich flavour of toasted oak, creamy figs and elegant smoky finish.
Measure all ingredients into a cocktail shaker, shake without ice until froth is formed. Next, fill the cocktail shaker with ice, then shake until frost forms on the outside of the cocktail shaker. Using a cocktail strainer, pour into a chilled coupe glass. Garnish with a spritz of Angostura aromatic bitters and bonito flakes.

What Bat Country
Why This is the perfect transitional drink for Autumn. It adds a twist to the Irish Coffee, by blending in unexpected ingredients like blackcurrant, pistachio and cardamom, and extra alcohol - Gosling rum and Guinness. Topped with a foamy wild civet cream, this is one drink that will warm your body on chilly days.
- 30ml Irish whiskey
- 15ml Gosling’s dark rum
- 10ml Crème de Cassis
- 15ml Guinness syrup
- 7ml Pistachio syrup
- 7ml Luaco wild civet coffee cream liquor
- 75ml Hot coffee
- 1 dash Cardamon bitters
Get a coffee cup, throw all the ingredients in and stir them up, top with wild civet cream and grated nutmeg and serve immediately.

What Bliss Negroni
Why took a few of the things we love to eat most at The Wise King and incorporated them into one of our all-time favourite cocktails, the Negroni. Plus, black truffle is usually harvested in Autumn, so it’s the perfect season.
- 30ml Black truffle Nutella gin
- 45ml Peated Mancino rosso
- 30ml Amari
Pour the ingredients in a mixing glass. Stir over ice cubes, strain into a double Old Fashioned glass with an ice sphere. Garnish with a slice of Nutella black truffle.
