Antioxidant-Boosting Kabocha,
Cauliflower & Paprika Soup
Why it’s good for you: Kabocha, cauliflower and paprika are all rich in antioxidants such as alpha-carotene and beta-carotene that are said to reverse UV damage and improve the skin’s texture, along with protection against further sun damage. The bonus? Vitamin A has also shown results in reducing oil production, so is useful in warmer, balmier months.
5 steps to make it:

Sauté half an onion and 3 cloves of minced garlic over medium heat.

Add 2½ cups of cauliflower, 2½ cups of kabocha squash and ¼ teaspoon of paprika powder.

Bring to boil and turn down to a low simmer.

Cook for 10 minutes, before moving mixture to a blender to puree.

Let cool, add salt and pepper and serve.

Collagen-Rich Beef Bone Broth Soup
Why it’s good for you: Bone broth is rich in the protein collagen - which is both a key gut healer, and the building block of younger looking skin. Bone broth also contains hyaluronic acid, which helps skin retain moisture and stay plump.
5 steps to make it:

Cook 4 pounds of beef bones for 40 minutes in the oven, flipping half way through.

Once cooked, place bones in a pot with 12 cups of water. Add 2 tablespoons of vinegar and leave in room temperature for 30 minutes.

Roughly chop 1 onion, 1½ carrots, 1½ leeks and add to the pot.

Bring to boil then lower to a simmer. Simmer for 48 hours, cool, strain, and refrigerate for 4-6 hours.

Slowly warm the broth back over a low heat and serve.

During the first 3 hours, skim any foamy layer of the top of the soup and discard

Sauté 2 cups of spring onions (white parts), 3 chopped garlic cloves, 2 white peeled, diced potatoes and 2/3 cups of kimchi (2 tablespoons of the juice reserved) over medium heat, cook for 2 minutes.

Add 2 tablespoons of kimchi juice along with four cups of water with 1 tablespoon of mellow white miso dissolved inside.

Bring to boil, reduce to a simmer and cook for 45 minutes.

Move to a blender, puree until smooth.

Add a spoonful of cooked quinoa into the blended mixture and serve.
